PALEO Recipe: Chilli Garlic Chicken Veggie Skillet
Sometimes I feel bad calling my cooking ‘recipes’ because most of the time its more of chopping and chucking in a pan. That’s exactly what this is. I picked up some baby bell peppers at the farmers market this weekend and they were absolutely delicious in the dish.
3 Chicken Thigh Fillets cut into small pieces
3 teaspoons minced garlic
2 teaspoons chilli minced
1 head broccoli broken into small pieces
1 carrot sliced
1/2 punnet baby roma tomatoes cut in half
3 sweet baby bell peppers
200g Spinach leaves
3 mushrooms chopped
1 large handful cashew nuts
pepper to taste
1/2 avocado cut into small pieces
1. Cook chicken in skillet with garlic and chilli until chicken is almost cooked through.
2. Add Broccoli, carrot, tomatoes, capsicum, spinach, mushrooms and cashews. Cook on medium heat until broccoli softens. Add pepper to taste.
3. Place mixture in a bowl, top with avocado.
